NAMP 496 Pork butt 

A pork butt is the top half of a pork shoulder.  They are used mostly by Chinese and BBQ restaurants. It is not recommended as a foodservice pork roast because of the fat.  They make excellent sausage meat and are futher processed as Capicola, an Italian lunchmeat made from a pork butt. Pork butts are available bone in, boneless, trimmed or untrimmed.
