Fresh bacon is simply an uncured piece of pork belly.  It can be purchased sliced or unsliced and has many foodservice applications.  For example it can be wrapped around a beef tenderloin steak to add flavor, it can be cooked and added to a salad for extra taste, or it can be made into an entree as shown here.
