Spare ribs are the bones from the rib cage of the hog. There are different sizes available, most popular in foodservice is 3.5 dn, meaning the whole rib weighs 3.5 lbs or less. They are also sized as 3.5 to 5 and 5 1/2 up, referring to the weight of all 13 rib bones.
