Quarter loin pork
chops
A quarter loin chop is
a good marketing name for end cuts.
To cut a package
of quarter loin chops you would take a whole pork loin and cut 1/8”
off each end making a quarter of the loin.
Cutting it in this
manner leaves the entire center of the loin for further merchandising at
a higher margin, such as center cut pork chops or center cut pork
roasts.
Quarter loin chops are
normally sold at a fairly low price making them a good value at the
retail counter, however, they are very seldom sold in foodservice. When
they are sold in foodservice they are normally called rib end chops or
loin end chops.
Good item for an all
you can eat buffet.
