Beef Round, Top (Inside), Untrimmed, IMPS/NAMP 168
Separated from the knuckle and bottom round, the top round is the inside portion of the round primal, with all bones, cartilages and exposed lymph glands removed.


Cuts in the IMPS/NAMP 169 series include specific cutting, trimming and boning specifications. Netting or Tying Specifications are also included.

• Beef Round, Top (Inside), IMPS/NAMP 169, The gracilis membrane is removed.
• Beef Round, Top (Inside), Cap Off, IMPS/NAMP 169A, Same as #169 with the gracilis, pectineus and sartorius muscles removed.
• Beef Round, Top (Inside), Cap, IMPS/NAMP 169B, The gracilis muscle that was separated from the 169A.
