Why is the hamburger I buy at the grocery store sometimes gray or brown in the middle?

 bytes)When hamburger meat is ground at the grocery store, the blood in the meat is oxygenated and turns red. Over time the oxygen is lost and the meat loses it's "bloom". That happens quicker in the middle of the package, but it is still safe.

Fresh ground meat should be used within one or two days.
