Which breed of cattle would be the
best quality?
There are
over 70 breeds of cattle in the U.S. Many of them have been cross bred resulting in a
cattle population of between 125 and 150 million head of “Generic “ cattle.
The reason this crossbreeding takes place is
because the first offspring of crossbred cattle usually gain weight at a faster rate and
the quality of the meat can still be controlled by proper feeding.
There are many ranchers who have maintained
the integrity of the breed. However, these cattle must also be grain fed and meet the USDA
grading requirements of choice or higher to be a high quality piece of meat. The breed
alone does not guarantee the meat will have a good flavor and tenderness.
