What is a “Split”?

Many foodservice distributors will “split” the box.  This means that they open it and repackage the individually vacuum packed pieces into smaller sizes (one or two per box vs. 5 or 6 per box.)  This reduces the case price and the case weight since there are fewer in the box.  The distributor can get a premium for doing this, as it creates a margin opportunity for them.
